Happy Eating

Quick Dinner Idea: Loaded Potatos

Need a unique idea for dinner this week? Try this and let me know what you think.



Step #1) Wash potatoes and rub with safflower oil, kosher salt and fresh cracked pepper

Step #2) Stab the tater a few times

Step#3) Wrap in foil


Step#4) Place foil covered taters into your trusty crock pot and turn on high to allow your potatoes to cook for 4-6 hours or low and you can cook them for 6-8 hours.

Step#5) Go crazy with your toppings! Below is a picture of what I made, but there are a lot of other toppings to consider like avocado, bacon, ortega chiles, ranch dressing, chicken, etc...

From top: shredded cheese, butter, pepper, ham (you can't see it), homemade salsa, sea salt, blanched veggies: asparagus, broccoli, bell pepper, onions)

Great idea! I'm going to try it this week. I love real baked potatoes (not microwaved) but don't want to wait an hour after I get home from work.

Your mother must be very proud of you ;)
